Vegan Apple Crisp
Apple Oat Crisp

Ingredients:
Topping:
2 cups gluten-free rolled oats
½ cup light brown sugar
¼ teaspoon coarse salt
6 tablespoons coconut oil, melted
2 tablespoons water
Filling:
4-5 apples (2 pounds) peeled, cored and cut into ½ in slices*
¼ cup light brown sugar
¼ cup dried cherries
¼ teaspoon ground cinnamon
Directions:
Step 1- Preheat oven to 375 degrees.
Step 2 – Use a food processor to finely chop 1 cup oats until coarsely ground*.
Step 3 – Pour into a bowl and combine the remaining oats, brown sugar, salt, coconut oil, and water until crumble forms.
Step 4 – In a separate bowl, use your hands to combine apples, brown sugar, cherries, and cinnamon until each apple piece is coated with the dry ingredients.
Step 5 – Pour apples into an 8 x 8-inch square pan. Evenly sprinkle the crumble over the top of the apples.
Step 6 – Cover pan with aluminum foil and bake for 30 minutes. Remove aluminum foil and bake for an additional 30 minutes or until apples are tender. Let cool.
Enjoy warm or chilled.
*Tips and Tricks:
- Cut all apples to the same thickness
- You can substitute ground oats with oat flour
Techniques:
- First peel apples, then use an apple slicer or knife to cut them into eight sections. Cut each section in ½ or ⅓ one more time.
- You can use a knife to peel the apples if you don’t have a vegetable peeler.
